Easy Meatloaf Recipe

We’ve had many different meatloaf dinners over the years and loved every single delicious meatloaf bite. It’s a classic dish that is loved by so many but doesn’t get enough love when it comes to serving it to friends or at dinner parties. But we’re here to say that meatloaf is awesome and deserves to be served at parties and not just at your average everyday weeknight meal.

Our favorite meatloaf recipe is this one that has lots of meaty flavor from the Worcestershire sauce, garlic and spices. What makes it super duper juicy is the onions, egg, ketchup and milk. It’s the perfect blend and combination of spices and moisture that results in a fabulous slice of juicy meatloaf. Be generous and slice a nice thick slice and serve it with your favorite veggies or salad. Every bite will make you crave another bite and before you know it, your thick slice is all finished. Time for seconds if there’s any left!

How to Make Meatloaf Flavorful and Keto Friendly

Here’s some tips for making the meat light and fluffy and some options for the low carb keto diet

  • You can use crushed saltine crackers instead of bread crumbs.
  • Making meatloaf lower carb. If you want to make it keto friendly, use crushed pork rinds. Crushed pork rinds definitely makes it keto friendly.
  • Don’t use all the onions if you want to keep it as keto friendly as possible. Use onion powder to replace the chopped onions.
  • For the sauce, use a keto friendly tomato sauce instead of ketchup.
  • When placing the meat in the baking dish, don’t pack it down too tight. If you pack the meat down too dense, it will cook hard and dense. We just lightly press it into the edges of the pan, then smooth out the top, that’s it!
  • To find the perfect proportion of salt and seasonings try this technique. After you’ve mixed the beef mixture together well, cook up a small piece on a frying pan and taste it. From there, you can make adjustments before you bake the meatloaf. This is a fool proof way to make sure that your meatloaf is perfectly seasoned to your palate. Best of all, you don’t have to wait until it’s all cooked to know if it’s seasoned enough for you.

Ingredients

FOR THE MEATLOAF:

  • 1 1/2 pounds (680 g) ground beef , pork, chicken or turkey
  • 1/2 cup (54 g) bread crumbs or panko bread crumbs
  • 1 large egg
  • 2 Tablespoons (30 ml) fresh chopped parsley
  • 1/2 cup diced onion , about 1/4 medium onion
  • 2 cloves garlic , minced
  • 1 Tablespoon (15 ml) Worcestershire sauce
  • 1/2 teaspoon (2.5 ml) ground mustard powder
  • 1 teaspoon (5 ml) kosher salt , or to taste
  • 1/2 teaspoon (2.5 ml) fresh cracked black pepper
  • 1/4 cup (60 g) ketchup or tomato sauce
  • 1/4 cup (60 ml) milk

SAUCE

  • 1/2 cup (120 g) ketchup
  • 2 Tablespoons (30 ml) bbq sauce
  • 2 Tablespoons (30 ml) apple cider vinegar
  • 1 Tablespoon (15 ml) brown sugar
  • 1/2 teaspoon (2.5 ml) smoked paprika powder
  • 1/4 teaspoon (1.25 ml) chipotle powder (optional, will make the sauce spicy)

Instructions

  • Pre-heat oven to 350°F (175°C). Grease an approx. 8.5″x4.5″ bread loaf pan or baking dish.

  • In a large bowl combine all the meatloaf ingredients (beef, bread crumbs, egg, parsley, onion, garlic, Worcestershire sauce, mustard powder, salt, pepper, ketchup or tomato sauce, and milk).

Cook a small piece of the meat at the point to taste for seasonings. If you want to add more salt/pepper, add it now before baking.

  • Transfer the mixture to baking dish and gently smooth out the top, but do not press down too much on the meat. You don’t want the meat to be too dense by packing it down hard.

  • Make the sauce: combine all the sauce ingredients (ketchup, bbq sauce, apple cider vinegar, brown sugar, smoked paprika, and chipotle) and pour over the top and top edges of the meatloaf.

  • Bake in oven for about 1 hour to 1 hour 15 minutes or until the loaf is cooked through and the internal temperature is at least 160°F (71°C).

This is such a fabulous recipe! It came out so tender and juicy and sliced just right! I made a few small tweaks: I saute the onion and garlic 5 mins before adding to mixture. I used 1/4 more quick oats and breadcrumbs mixture. Used actual mustard instead of powder. I covered the loaf the first 15 minutes with foil, cooked 45 mins on 350F then last 15 mins on 400F.
For the sauce I used only 1tbsp of BBQ sauce and apple cider vinegar and added 3-4 tbsp of brown sugar (I like my sauce a bit sweeter). Added the sauce to the loaf , then cooked additional 10 mins. Rest for 10 minutes. It was great and my guests were absolutely raving!

    Thank you!! -A

Hi, please review the amount of parsley when quoted as “30 g” (30 grams). I think there is a typo and it should be “3 g” (3 grams).

I have made the meatloaf using 3 grams of parsley, delicious. Thank you.

FAQs

What is the secret to moist meatloaf? ›

Meat by itself will simply drain away the juices and end up dry. A percentage of 15 to 25 percent breadcrumbs in relation to the meat is common in most of today's recipes. Especially if you are using leaner meat, you may want to soak your breadcrumbs in a little milk or stock before adding them to the meatloaf.

Why do you put milk in meatloaf? ›

Milk and other dairy products, like heavy cream and buttermilk, contain both water and fat, adding two types of moisture to our meatloaf. There's a long-held theory that milk can tenderize ground meat, and this is the reason often cited for cooking ground meat in milk to make a Bolognese-style ragù.

What ingredient keeps meatloaf from falling apart? ›

When this happens, it's because you didn't use enough. Next time, try adding in an extra egg and/or some more breadcrumbs. Alternatively, rice, barley, corn flakes, crackers, and dried soup mix can also stand in as binding ingredients as well. Including larger quantities of these items should help solve the problem.

What is the basic meatloaf formula? ›

The Basic Meatloaf Formula

All recipes for meatloaf start with the same basic formula: 2 pounds of ground meat and a “panade” made of bread or crackers soaked in milk. Along with a few eggs, this panade helps to hold the ground meat together and adds some essential moisture to the mix.

Should I cook my meatloaf covered or uncovered? ›

Should I cook my meatloaf covered or uncovered? The meatloaf can be cooked uncovered. However, if you are concerned about it burning, you can cover the meatloaf with foil for the first 45 minutes and uncover it for the final 15 minutes to allow the meatloaf to brown on top.

What not to put in meatloaf? ›

Onions, garlic and celery do pose one problem though: they don't cook down easily. Little bits of crunchy onion or celery or potent, hot garlic will spoil the comforting aspect of eating meatloaf.

How do you keep meatloaf from drying out? ›

Use Extra Egg: Eggs act as binders and provide moisture. Add one or two eggs per pound of meat for a moist texture. Make Use of Milk: Soak breadcrumbs in milk before adding them to your mixture. This will keep your meatloaf moist during baking.

Is it better to bake meatloaf in glass or metal? ›

Metal pans are great conductors of heat; in other words, they heat up quickly, but in turn, they also cool down more rapidly once removed from the heat source. Additionally, metal pans can withstand higher temperatures than glass.

What does adding an extra egg to meatloaf do? ›

Sure, egg yolks add some rich flavor to a meatloaf, but the real reason we need eggs is for structure—to help bind the meatloaf together. This is especially important since we're making a free-form meatloaf, or one that you shape by hand, versus using a loaf pan.

Is it better to bake meatloaf on a sheet pan or loaf pan? ›

When choosing a baking pan, avoid a small loaf pan or baking dish. A tight fit means that the loaf will steam — think school cafeteria meatloaf. Instead, use a sheet pan or a large baking dish and leave some breathing room so the edges will caramelize nicely.

Why put ketchup in meatloaf? ›

Whether you slather a thick layer of ketchup on top of the meatloaf before it goes into the oven, add a few tablespoons to the ground meat mixture, or serve extra ketchup on the side, this tangy-sweet, umami-rich condiment balances out the richness of the beef, making it an essential part of the dish.

What happens if you put too much eggs in meatloaf? ›

Fewer eggs will create a denser and firmer meatloaf that will be more compact and easier to slice, but more eggs can create a more tender and light texture that allows the meatloaf to melt in your mouth.

Why is my meatloaf so bland? ›

You're Not Sufficiently Seasoning the Meat

A good rule of thumb is to add one teaspoon of kosher salt per pound of meat. Before you cook the meatloaf, it's not a bad idea to very quickly saute a small nub of the meat mixture and give it a taste.

How do I keep my meatloaf from drying out? ›

Add one or two eggs per pound of meat for a moist texture. Make Use of Milk: Soak breadcrumbs in milk before adding them to your mixture. This will keep your meatloaf moist during baking. Slather on Sauce: Add a layer of ketchup, barbecue sauce, or a mixture of both on top of your meatloaf before baking.

How do you add moisture to cooked meatloaf? ›

To moisten dry meatloaf, drizzle a small amount of broth, tomato sauce, or gravy over the slices before reheating.

How do you keep meatloaf from being dense? ›

Overmixing will make a meatloaf dry and dense. Start by stirring the wet ingredients together. Then add the sautéed veggies. Now, before starting to mix it all together there like a mad man, just stop.

How do you firm up meatloaf? ›

One of the most common reasons meatloaf is watery is an overabundance of liquid ingredients. Adding broth, milk, or eggs can enhance flavor and moisture, but too much can lead to a soupy consistency. Use these ingredients sparingly, and consider adding breadcrumbs or oats to absorb excess moisture.
